An excellent option for health-conscious friends or those looking for a sophisticated alcohol-free alternative, you can easily store the green apple juice base in the fridge to have on hand whenever you like!

This green apple mocktail is perfect for a summer, especially paired with these blueberry mocktails and pomegranate mocktails!

Why Make a Green Mocktail?

I originally developed the base of this recipe for the anti-inflammatory properties, but when I mixed it with sparkling water, I found it to be delightful and refreshing.

This green apple mocktail is perfect for:

  • Spring parties and St. Patricks Day – This would work well as a St Patricks day mocktail, Easter mocktail, or baby shower, especially for any parties where green is a focus color!
  • Rehydrating – With cucumber and ginger, this drink is the ultimate way to cool down!
  • All diets – Perfect for those who are gluten free, dairy free, HYH diet friendly, or those on a Mediterranean diet.

Ingredients

Below are details on choosing main ingredients, please see the recipe card below for the full recipe.

  • Green apple – This is known as a “granny smith” and has a sweet and tart flavor.
  • Cucumber – Use seedless cucumbers or “English” cucumbers, which are easier to chop and blend without seeds.
  • Fresh ginger root – It’s important to use fresh and not dried ginger.
  • Fresh spinach leaves – Adds greens and aids with the bright green color. Can be substituted with arugula for a more peppery flavor.
  • Lemon – Optional but really brings out the brightness in the apples. If you’re following the HYH migraine diet or low histamine, just omit it.
  • Sparkling water – I like to use Topo Chico in mocktails because it’s got the most carbonation! But any favorite sparkling water can be used.

Variations

  • Substitute any kind of apple you like, but this may change the flavor. I recommend honeycrisp for a sweeter flavor.
  • Homemade ginger juice can be substituted for fresh ginger.
  • Add herbs – basil or mint could be added for more flavor. You can even just use the leaves to muddle it at the bottom of the glass before pouring!

How to Make A Green Mocktail

  • Step 1: Add all the washed and dried apples, cucumber, peeled ginger, and honey, along with the filtered water, to the blender.

  • Step 2: Blend all ingredients in a high-powered blender, on high, for 30 seconds. Taste and add more honey if desired.

  • Step 3: Strain the mixture through a nut milk bag (or a fine-mesh strainer) into a glass jar or measuring cup, squeezing the bag (or push the juice through the strainer with a spoon). Discard the pulp.

  • Step 4: Pour about 1/4 cup of green juice in a glass with ice. Top with sparkling water for the ultimate green mocktail!

Serving Suggestions

If serving for an Easter brunch or holiday, I recommend pairing it with easy quiche florentine and a butter lettuce salad to keep the green theme going!

For a party, I recommend pairing with these cream cheese tortilla roll ups or artichoke hummus.

Make Ahead

The base of this recipe is amazing to prep ahead and keep in the fridge. You can even use it as a green wellness juice shot. Store in the fridge for up to 3 days or freeze into small ice cubes.

When ready to serve, add the green juice to each glass with ice and top with sparkling water or club soda.

Refreshing Green Mocktail

Ingredients 

  • 2 green apples, core removed and cut into 1-inch chunks
  • 1 cup seedless cucumber, chopped
  • 1 ounce fresh peeled ginger root
  • 3 cups fresh spinach
  • 1-2 tablespoon honey
  • 2 cups filtered water
  • Optional: juice of 1 lemon
  • 1 can sparkling water or club soda

Instructions 

  • Add all the ingredients except the sparkling water to a high-powered blender, on high, for 30 seconds. Taste and add more honey if desired.
  • Strain the mixture through a nut milk bag (or a fine-mesh strainer) into a glass jar or measuring cup, squeezing the bag (or push the juice through the strainer with a spoon). Discard the pulp.
  • Add about 1/4 cup of the green juice to a glass with ice, then top with sparkling water. Garnish with lemon or cucumber.

Notes

  • Green apples can be substituted with honeycrisp but the juice will be much sweeter and less tart. Honey can be substituted for maple syrup. 
  • This recipe fits an HYH migraine elimination diet if you omit the lemon juice.
