This super easy green apple juice with cucumber and ginger is the perfect refreshing drink! Packed with fruit and vegetables, there is no need for a juicer – this can be made with a blender in just 10 minutes.

  • Why you’ll love it: Whenever I have a migraine attack, it can be challenging for me to eat a full meal – so I need a quick way to get in nutrients. With potassium and magnesium-rich fruits and vegetables, the ginger provides some anti-inflammatory power. No need to buy this green apple juice from the store for $6 when you can make it quickly at home.

  • Green apple – Also known as “granny smith” this has a sweet and tart flavor. These have a higher acidic content making them great for people who can’t use citrus.
  • Cucumber – Be sure to get seedless cucumbers or “English” cucumbers because it is easier to blend them this way.
  • Fresh ginger root – This will give you the best flavor. It can be peeled with a peeler or the back of a spoon. You do not want to substitute this with dried ginger.
  • Fresh spinach leaves – Do not substitute frozen spinach.
  • Lemon – This is optional but really brings out the brightness in the apples. If you’re following the HYH migraine diet or low histamine, just omit it.

Substitutions

  • Green apple – Can be substituted with another variety like honeycrisp, but this will change the flavor and might make the juice sweeter.
  • Spinach – Arugula will work for a low histamine option that will still taste fresh!
  • Honey – Use maple syrup to sweeten instead.
  • Ginger juice – Follow this recipe for how to make ginger juice and this can be substituted instead of blending ginger root. Just add it into the green apple juice mixture after straining to taste.

Variations – Add in fresh mint or basil for an extra boost of flavor! Or you can add a celery stick if desired.

How to Make Green Juice without a Juicer

  • Step 1: Add all the washed and dried apples, cucumber, peeled ginger, and honey, along with the filtered water, to the blender.

  • Step 2: Blend all ingredients in a high-powered blender, on high, for 30 seconds. Taste and add more honey if desired.

  • Step 3: Strain the mixture through a nut milk bag (or a fine-mesh strainer) into a glass jar or measuring cup, squeezing the bag (or push the juice through the strainer with a spoon). Discard the pulp.

  • Step 4: Serve juice in glasses. You can also freeze the juice in an ice cube tray and/or store any remaining juice in a glass bottle or mason jar in your fridge for up to 3 days.

Equipment

Because this green apple juice doesn’t use a juicer, I recommend a good quality high speed blender.

Sometimes you can get away with straining in a fine mesh strainer, but a nut milk bag will remove even more of the vegetable and fruit pulp. Here are my recommendations for brands.

Storage Information

Store the juice in an airtight for up to 3-4 days in the fridge, or you can use freezer containers like Souper Cubes to freeze in individual portions for up to 4-6 months.

Pop them out as needed and let them defrost overnight, or use them as ice cubes with sparkling water.

There are a few ways you can enjoy all the delicious benefits of this green apple, ginger and cucumber juice. A few of my favorites are:

  • Juice wellness shots – Just a 2oz glass or use tiny containers to portion throughout the week.
  • Ice cubes – These make amazing flavored ice cubes and would be perfect for a St. Patricks Day green drink. Use souper cubes 2 tablespoon freezer molds for best results.
  • Mocktails – Make a green mocktail with sparkling water.

  • 2 green apples, core removed and cut into 1-inch chunks
  • 1 cup seedless cucumber, chopped
  • 1 ounce fresh ginger root
  • 3 cups fresh spinach
  • 1-2 tablespoon honey
  • 2 cups filtered water
  • Optional: juice of 1 lemon

Instructions 

  • Add all the ingredients to a high-powered blender, on high, for 30 seconds. Taste and add more honey if desired.
  • Strain the mixture through a nut milk bag (or a fine-mesh strainer) into a glass jar or measuring cup, squeezing the bag (or push the juice through the strainer with a spoon). Discard the pulp or save it to freeze for smoothies.
  • Serve juice in glasses or mix with sparkling water for a mocktail. You can also freeze the juice in an ice cube tray and/or store any remaining juice in a glass bottle or mason jar in your fridge for up to 3 days.

Notes

  • Peeling ginger – I prefer to peel the ginger root for this recipe, but if you want to leave it on to make this recipe easier and faster, you can. 
  • Ice cubes – Pour the strained juice into a 2 tablespoon ice cube container (should make about 12 cubes) and freeze for 6-12 hours. Then serve with sparkling water, coconut water, or ginger ale. 
  • Green apples can be substituted with honeycrisp but the juice will be much sweeter and less tart. Honey can be substituted for maple syrup. 
  • This recipe fits an HYH migraine diet if you leave out the lemon juice. It is gluten free, dairy free, low sodium, and helpful for nausea or migraine days.
