Add all the ingredients except the sparkling water to a high-powered blender, on high, for 30 seconds. Taste and add more honey if desired.
Strain the mixture through a nut milk bag (or a fine-mesh strainer) into a glass jar or measuring cup, squeezing the bag (or push the juice through the strainer with a spoon). Discard the pulp.
Add about 1/4 cup of the green juice to a glass with ice, then top with sparkling water. Garnish with lemon or cucumber.
Notes
Green apples can be substituted with honeycrisp but the juice will be much sweeter and less tart. Honey can be substituted for maple syrup.
This recipe fits an HYH migraine elimination diet if you omit the lemon juice.
