- Bread – This sandwich works well with sourdough, seeded bread, white or wheat bread. It would also be great with focaccia! It tastes even better if you can use a good quality loaf with a thicker crust.
- Store-bought rotisserie chicken – Widely available, but my favorites are the simple kinds with just salt, olive oil, and pepper. You can find these at Sprouts, Whole Foods, and Fresh Market. If you want to use homemade, try my easy cast iron roast chicken recipe!
- Boursin cheese – I recommend using the Boursin Garlic and Fine Herbs cheese, but this will work with many different types of Boursin. Shallot and chive, black pepper, or basil would all be good.
- Roasted red pepper – This adds a little sweetness and brightness to the sandwich, and compliments the Boursin and rotisserie chicken nicely. You can use homemade roasted red peppers or store-bought.
- Vegetables – I love to use thinly-sliced English cucumbers for crunch, and either spinach, arugula, or lettuce for a green.
- Fresh basil leaves – Adding a few fresh basil leaves on top really makes these flavors pop. It’s still a delicious sandwich without them, but highly recommend for extra flavor.

- Gluten free – Use your favorite gluten free bread like Canyon Bakehouse or Bread SRSLY.
- Dairy free – Use dairy free Boursin cheese.
- Protein – This sandwich would also be great with thick-sliced turkey or leftover chicken breast.
- Boursin cheese – Substitute this for goat cheese or cream cheese, if desired. Boursin does give this extra flavor, so a garlic or herb blend in either of these would be ideal.
- HYH diet – Wait a day to use fresh baked bread, or use packaged bread. Ciabatta, wheat, or focaccia are ok, avoid sourdough.
How to Make The Best Rotisserie Chicken Sandwiches

Step 1: Spread the Boursin cheese onto both sides of the sliced bread. This helps to seal the bread from the moisture of the cucumber and roasted red pepper. It also holds up better than mayonnaise!

Step 2: Add fresh basil leaves on top.

Step 3: Add the rotisserie chicken on top of the basil, it can be warm or cold rotisserie chicken.

Step 4: Top with cucumbers, roasted red peppers and lettuce, if desired.

Toasted Bread Tips
If my bread is really fresh, I like to leave this sandwich un-toasted, but if you’re working with older, tough bread, toasting it can make the sandwich much easier to eat.
You can toast your bread a few different ways. The first being the most obvious – a toaster. If you’re making these rotisserie chicken sandwiches for a party or meal prep, you can lay a bunch of the bread slices out onto a baking sheet, and toast at 400°F for about 5 minutes.
For a richer, warm chicken sandwich, melt a small pat of butter in a cast iron pan over medium heat, then add the sandwich on top, toasting each side for about 1-2 minutes until golden brown.
Make Ahead and Storage Instructions
- Make ahead – Sandwiches can be made up to 1 day before. Boursin doesn’t make the bread too soggy, especially for just one day. However, I do recommend a thicker, hearty bread versus sandwich bread in this case.
- Leftovers – Assembled sandwiches will keep well in the fridge for 1 day.
- Freezer – Freeze the bread, rotisserie chicken, roasted red peppers, and Boursin cheese separately. Defrost them overnight in the fridge. Assemble with the fresh ingredients when you’re ready!

Serving Suggestions
This sandwich pairs well with the basics – simple potato chips, a fruit salad, apples, pears, cucumber salad, or even a delicious white bean soup.

Rotisserie Chicken Sandwich
Ingredients
- 2 slices good quality bread like sourdough, focaccia, ciabatta
- 1-2 tablespoons Boursin garlic and herb cheese
- 6 fresh basil leaves
- 1/2 cup rotisserie chicken, shredded, plain recommended
- 1 seedless cucumber, sliced thin, 6-7 slices per sandwich
- 1 jar roasted red peppers, 2 tablespoons per sandwich
- 2-3 lettuce leaves, butter lettuce, arugula, or spinach
Instructions
- Cut the bread into 1/3-1/2 inch thick slices, leaving un-toasted if fresh (feel free to toast it for a little crunch). Spread both sides of the bread with Boursin cheese, then layer in basil, rotisserie chicken, cucumber, and roasted red peppers.
- For a warm sandwich, melt a small pat of butter or olive oil in a cast iron skillet over medium low heat. Add the sandwich and cook 1-2 minutes per side, till golden brown and crispy.

You mentioned ‘Boulder Canyon Olive Oil Chips’. I don’t know if they contain salt. If so, be careful because sodium is definitely not good for folks who suffer from vestibular disorder.
Hi Marie, It’s really important to avoid sodium for meniere’s disease. However, this suggestion is for those on a migraine diet. While I agree it’s necessary to watch your sodium intake in general, it’s allowable for this particular diet.
