This peach mocktail is a delicious and refreshing drink that is perfect for warm weather! Made with fresh peaches, honey, and thyme, it's a great non-alcoholic peach drink.
You can pair the homemade peach syrup with sparkling water or add a splash of non-alcoholic addition like Seedlip Garden for a summer mocktail. Easy Peach Mocktail Recipe
I love to have fresh fruit mocktails during the summer months because there always seems to be a surplus of really great fruit. We have a local business called The Peach Truck that delivers the best peaches in bulk! So I had a lot of peaches to use in recipe testing.
I tested this peach mocktail two ways - simmering the fruit and blending the fresh fruit. I found that simmering produced a much stronger peach flavor that help up well to the sparkling water. Honey highlights the peach flavor as well as thyme, but many different types of herbs can be used.
You'll love this non-alcoholic peach drink because it's:
- Easy - Straightforward ingredients with minimal prep time.
- Great for summer - An easy way to use fresh peaches!
- Flexible - This recipe can be edited to use different herbs and flavors.
Equipment Needed
You will need a small pot and the following to make this peach mocktail.
- Fine mesh strainer
- Potato masher or something to mash the fruit
Ingredients
- Fresh yellow peaches - I haven't tried frozen in this recipe yet, but fresh yellow peaches were used in recipe testing. I recommend going with a sweeter peach like yellow over white peaches. Donut peaches would also work.
- Honey - Added for sweetness, you could also substitute sugar.
- Thyme - Fresh thyme pairs well with the peach flavor, but you could also use basil, mint, or lemongrass, or mint.
- Water - Both filtered water and sparkling water is used. You can also use club soda. I recommend Topo Chico as a great sparkling water for mocktails just because it is so much more fizzy than Pellegrino or some of the others.
- Seedlip Garden 108 - This non-alcoholic herbal blend is optional, but so great with this peach syrup! The herbal flavors pair well with the thyme, peaches, and honey.
I also tested this substituting lemon juice for the Seedlip and it was amazing too, but in a different way. This base recipe is extreme versatile, so you can make it your own!
How to Make
Step 1: Make the peach base
Begin by adding the sliced, pealed peaches, water, honey, and thyme to a small pot. Bring to a boil then reduce to a simmer for 5-7 minutes, or until the peaches have softened. Remove the thyme sprigs and use a potato masher to mash the peaches into the water to release any extra flavor. Wait about 5-10 minutes for it to cool slightly.
Step 2: Strain
Using a fine mesh strainer over a mason jar or bowl, press the fruit down with the back of a spoon to release the juices. Strain all of the peach juice out. (Pictures 2-3)
Step 3: Build the peach mocktail
To a short (lowball) glass with ice, add 1 ½ ounces of the peach honey blend, ¾ ounce of Seedlip (or another type of juice), and top with sparkling water. Use a spoon to swirl and mix all the flavors, then garnish with fresh thyme. (Picture 4)
Substitutions
- Herbs - Basil, mint, and lemongrass could all be used in this recipe. My personal recommendation is basil because it works so well in peach basil salads!
- Seedlip garden - If you don't want to purchase this, I recommend another type of juice, or doubling the amount of peach honey juice you add. Other types of juices that would work well are cranberry, mango, and apricot.
- Sparkling water - Can be subbed for club soda.

Pair this peach mocktail with a dinner or appetizer with fresh herbs like:

Make Ahead
This peach honey mocktail syrup can be made ahead and stored in the refrigerator for up to one week. I prefer to store mine in a mason jar or salad jar with a tight lid. Mix the drinks right before serving.

Peach Mocktail
Equipment
- 1 Fine mesh strainer
Ingredients
- 6 ounces fresh yellow or donut peaches (about 3-4), sliced, with pits and skin removed.
- 1 cup filtered water
- 3 tablespoons honey
- 5 sprigs of fresh thyme or basil leaves
- 8 ounces sparkling water or club soda
- ¾ ounce Optional: Seedlip Garden 108
Instructions
- To a small pot, add the sliced peaches, filtered water, honey, and 1-2 sprigs of fresh thyme or basil leaves. Bring to a boil over medium high heat, then reduce to a simmer for 5-7 minutes or until the peaches are soft. Remove from the heat and allow it to cool 5-10 minutes. Mash the softened peaches with a potato masher or other utensil.
- Over a small bowl or mason jar, pour the peach water through a fine mesh strainer, using the back of a spoon to push the fruit down and squeeze out any juice. Discard any extra fruit pieces (or you can use it in the bottom of the glass if you don't mind the texture).
- To a small (lowball) glass, add ice, 1 ½ ounces of the peach honey mixture, ¾ ounce of seedlip or alternative juice (see notes), and top with roughly ¼ cup of sparkling water. Stir together with a stirrer or spoon. Add thyme or basil leaves for garnish.
Notes
- The peach honey mixture makes enough for about 4 mocktails, depending on how much you like to use for flavoring.
- Seedlip Garden 108 is optional, but lovely paired with these flavors! You can add more of the peach juice, or you could also substitute lemon juice (if tolerated) or another favorite juice like pomegranate, cranberry, or mango.
- Sugar can be substituted for honey, if needed.
