This easy watermelon juice makes a great refreshing summer drink with natural electrolytes. You can also make this into a mocktail, slushie, or ice cubes!
To a blender, add the watermelon, salt, mint, honey, and lime juice (if using). Blend on high for about 20 seconds until the watermelon is completely pureed.
Strain mixture through a fine mesh sieve into your prepared glasses. Garnish with a sprig of mint.
For a mocktail - Prepare your glasses: Run a piece of watermelon around the rims of two glasses. Pour about 2 teaspoons of salt onto a plate and place each glass upside down onto the salt, twisting the glass until the rim is coated. Fill each glass with ice.
Frozen watermelon mint slush - Freeze watermelon into pieces before adding to the blender. This is best done on a sheet pan so the pieces don't stick together. Add a 1-3 tablespoons of coconut water to the blender or food processor to get it moving. Blend till smooth.
Watermelon mocktail - Add lime juice and top your glass with rubbing a lime around the rim and then dipping into salt. Fill with ice and watermelon juice. Or top off with ginger ale or sparkling water.
HYH diet / low histamine - Substitute lime juice with pomegranate juice (about 2 tablespoons). Low salt - omit the added salt.
