Place the coconut water, grated fresh ginger, mint leaves, honey or maple syrup, mineral salt, and lime (if using) in a high-speed blender and blend for about 1 minute until the mint and ginger is all mixed through.
Pour through a fine mesh strainer to strain out any larger pieces (you may not need to do this with a good blender!) and pour that mixture over ice, filling the glass about 3/4 full. Garnish with mint leaves and top off with ginger ale or sparkling water.
Ginger Slushie Drink
Freeze the coconut water into ice cube trays. You will not need the ginger ale or sparkling water. Add the coconut ice cubes, ginger, mint leaves, honey, salt, and lime (if using) to a high-speed blender or food processor. Add 1-3 tablespoons of fresh coconut water to give the blender some traction. Use a tamper to push the ingredients down and evenly blend the mixture. Blend till a slushie texture and pour into a glass. Top with mint leaves.

Ginger ale recommendations are my homemade ginger ale or fever tree. Sparkling water, like Topo Chico, can also be used to top off the drink!
Mineral salt is added for electrolytes - you can leave it out if you don't want those!
HYH migraine diet - Substitute lime with a splash of pomegranate juice for the tart flavor. Top off with sparkling water or homemade ginger ale.
Ginger juice will keep in the fridge for up to one week, but the ginger and mint will become stronger with time. Use more ginger ale or sparkling water to even out the flavors.
