Spread goat cheese on one slice of bread and sweet chili jam/sauce on the other side. Add cucumber and arugula, then assemble the sandwich and eat!
For a grilled goat cheese sandwich - heat olive oil over medium low heat in a medium to large skillet. Toast on both sides, about 2-3 minutes. It's best to add cucumber after toasting to preserve the crisp texture!

Make this sandwich grilled/toasted in the winter (sometimes I prefer it without the cucumber) and fresh in the summer! It also makes fantastic vegetarian party sandwiches.
