To a small pot, add the peaches, filtered water, honey, and 1-2 sprigs of fresh thyme or basil leaves. Bring to a boil over medium high heat, then reduce to a simmer for 5-7 minutes or until the peaches are soft. Remove from the heat and allow it to cool 5-10 minutes. Mash the softened peaches with a potato masher or other utensil.
Over a small bowl or mason jar, pour the peach water through a fine mesh strainer, using the back of a spoon to push the fruit down and squeeze out any juice. Discard any extra fruit pieces (or you can use it in the bottom of the glass if you don't mind the texture).
To a small (lowball) glass, add ice, 1 1/2 ounces of the peach honey mixture, 3/4 ounce of seedlip or alternative juice (see notes), and top with roughly 1/4 cup of sparkling water. Stir together with a stirrer or spoon. Add thyme or basil leaves for garnish.
Notes
The peach honey mixture makes enough for about 4 mocktails, depending on how much you like to use for flavoring.
Seedlip Garden 108 is optional, but lovely paired with these flavors! You can add more of the peach juice, or you could also substitute lemon juice (if tolerated) or another favorite juice like pomegranate, cranberry, or mango.
