Blend berries, ginger, honey, lemon and water in a high powered blender for 30 seconds on high, until well combined. Strain the mixture through a fine mesh strainer, using as spoon to push the juice through the strainer until only the pulp remains.
Add 1/4-1/3 cup of the berry juice to a bottom of a glass with crushed ice. Top with sparkling water and fresh berries.
For berry electrolyte cubes - Combine the strained berry mixture in step 1 with 1¼ cups of coconut water. Pour into an ice cube mold and add 2-3 fresh berries to each mold. Freeze for up to 12 hours. Top with sparkling water (can be flavored).
Notes
Flavored sparkling water - While unflavored sparkling water or club soda can be used, flavored options also work well, especially if making the mixture into berry ice cubes. Pomegranate, cranberry, or lemon are my favorite suggestions for flavorings (I like spindrift).
Ginger ale variation - Use ginger ale as a mixer instead of sparkling water or club soda.
Berry Electrolyte Ice cubes - If making this, you will need all the ingredients above + 1 1/4 cups coconut water. Berry ice cubes take about 12 hours to fully freeze and will last in the fridge up to 4 months.
