1/4cuppacked mint leaves, plus 5-6 more leaves for garnish
1tablespoonhoney
Optional: Zest and juice of 1 lime
1cupfiltered water
8ouncessparkling water

Instructions
To a high-powered blender, add the frozen blueberries, mint leaves, honey, and zest/lime juice, if using. Add in 1 cup of water. Blend on high for 20 seconds. Taste and add more honey to sweeten, if needed
Strain the mixture through a fine-mesh strainer into a glass jar or measuring cup, using a spoon to push the juice through the strainer until only pulp remains. Taste and adjust any sweetener here. Discard the pulp.
Add ice to your serving glass and fill it half of the way up with blueberry mint juice. Top with 2-3 ounces of sparkling water or ginger ale to start, adding more as needed. Add mint sprigs and fresh blueberries for garnish, if desired.
Notes
Use fresh or frozen blueberries, but wild frozen blueberries are preferred.
Fresh ginger can be muddled with the mint before serving for a variation, or use ginger ale!
