Stuffed Pork Chops in the Air Fryer

These delicious and easy stuffed pork chops are filled with a shallot bread stuffing and perfectly seared in the air fryer!

Equipment

  • 1 Air fryer or convection oven

Ingredients

  • 2 pounds of butterflied pork loin chops (about 3-4 of them)*
  • 2 teaspoons olive oil or avocado oil
  • 2 celery stalks chopped
  • 1 shallot ⅓ cup chopped
  • ¼ cup parsley finely chopped
  • ¾ teaspoon poultry seasoning
  • 3 slices sandwich bread about 2 cups, cubed into ½ inch pieces
  • 1 tablespoon vegetable or chicken broth
  • Kosher salt and black pepper
  • Parsley for garnish

Instructions

  • In a small skillet, warm 1 teaspoon of olive oil over medium heat and add chopped celery and shallot. Stir often for 2-3 minutes until softened. In a large bowl, stir together the shallot/celery mix, parsley, poultry seasoning, bread and broth. Mix till combined (this is easier using your hands). If the stuffing isn't holding together well, you can add a little more broth to the mixture. 
  • Preheat the air fryer for about 5 minutes at 370F. Season both sides of the pork with salt and pepper and lightly oil the outside with either with a brush or spray. Add in the stuffing, securing with toothpicks at the opening. Cook the pork chops at 370 degrees F for about 18-20 minutes, turning halfway through. You want the pork chops to be golden brown on the outside. If they look like they're cooking too fast at the halfway point, lower the cooking time.
  • Stuffed pork chops are ready when they register at least 145 degrees F on a meat thermometer placed in the center of the pork chop loin (make sure you're not in the stuffing part). Allow the pork chops to rest at least 5 minutes before serving.

Notes

  • If you can't find butterflied pork chops in the store, have the butcher do for you or cut through the thickest part to the edge, without cutting all the way through - so it looks like a pork taco. These should be about ½ inch thick. If they're too thick, you can pound them with a meat mallet.
  • Air fryers can vary greatly in how they cook - I find smaller ones cook faster than larger ones or convection ovens. When you flip halfway through, if it's starting to already look very golden brown, cut down on the time.
