Southwest Egg Rolls

AIR FRYER

 Crispy on the outside and filled with a mixture of spices and veggies, these Air Fryer Southwest Egg Rolls are the vegetarian version of Chili’s famous appetizer.

KEY Ingredients

– Red bell pepper – Corn – Canned black beans  – Spinach  – Green onions  – Jalapeño  – Fresh cilantro - Cumin, paprika, garlic – American cheese   – Frozen egg roll wrappers

Saute green onion, bell pepper, corn, and jalapeno in a pan with oil. Add garlic, black beans, spinach and spices. Turn off the heat, stir in cilantro and cheese.

Instructions

Add 2-3 tablespoons of filling to an egg roll wrapper. Fold up the bottom, then both sides to make an "envelope." Roll to close then brush with oil.

TIME TO ROLL

Place in the air fryer in a single layer, seam side down. Cook for 8 minutes. Flip and cook another 4-5 minutes until golden brown.

AIR FRY

Remove from the air fryer and allow them to cool before serving with dipping sauce.
