Pat the salmon dry and heat olive oil until shimmering. Sear the salmon, skin side up, until light brown, then flip and cook for another 2-3 minutes.
Prepare Sauce Remove salmon from the pan and add in the butter, shallot and garlic, stirring often. Then pour in broth and heavy cream.
Finish Sauce Simmer until the sauce has thickened, then add spinach and stir until lightly wilted. Season and nestle the filets back into the spinach cream sauce.
