Cut zucchini in half, season and drizzle all sides with olive oil. Place the zucchini in the air fryer or oven, along with the garlic.
Roast zucchini Cook for 8-10 minutes then check garlic. Remove if golden brown and soft. Flip zucchini and continue cooking until golden brown.
Blend and combine Blend cottage cheese till smooth and fluffy. Transfer to a bowl, then blend zucchini and garlic till smooth. Fold whipped cottage cheese into the zucchini mixture.
