An easy and super flavorful meal of simply grilled chicken marinated in Moroccan spices and accompanied with couscous - filled with pomegranate seeds. A perfect 30 minute meal if marinated ahead!
Whisk together all the ingredients for the marinade and add the chicken, coating both sides. Allow the chicken to marinate at least 1 hour, up to 24 hours, before grilling.
Place the chicken on hot grill in a horizontal pattern and close the lid. Cook for 7-8 minutes per side and when it reaches an internal temperature of 165° F
Place shallot in hot pan, add paprika & broth, bring to boil.
Stir in the couscous, let sit.
After 10 min, remove the lid & fluff. Stir in pomegranate seeds, sunflower seeds & parsley.
