Chicken and Couscous

An easy and super flavorful meal of simply grilled chicken marinated in Moroccan spices and accompanied with couscous - filled with pomegranate seeds. A perfect 30 minute meal if marinated ahead!

KEY Ingredients

Chicken Breast | Olive Oil Garlic Cloves | Honey  Paprika  Cumin | Cinnamon Turmeric |Shallot | Broth Paprika | Couscous  Sunflower Seeds Pomegranate Seeds | Parsley

Using a mallet, pound the chicken till it's about ½ inch thick. I like to use two sheets of wax paper to avoid any mess.

Prepare chicken

Whisk together all the ingredients for the marinade and add the chicken, coating both sides. Allow the chicken to marinate at least 1 hour, up to 24 hours, before grilling.

Marinate Chicken

Place the chicken on hot grill in a horizontal pattern and close the lid. Cook for 7-8 minutes per side and when it reaches an internal temperature of 165° F

Grill

Place shallot in hot pan, add paprika & broth, bring to boil. Stir in the couscous, let sit. After 10 min, remove the lid & fluff. Stir in pomegranate seeds, sunflower seeds & parsley.

Make the couscous

Serve warm chicken over couscous. ENJOY!
