Make more than one serving at a time with this easy quesadilla pizza - with melty cheese and marinara sauce. This is great for weeknights, meal prep, or school lunches.
Preheat oven to 400ºF and spread the olive oil on the bottom of a cast iron (or oven-safe) skillet.
Cut each of the 3 tortillas in half. Take a half tortilla and spread the bottom with roughly 1 tablespoon of ricotta in a triangle shape (like a slice of pizza) in the center of the tortilla half. Top with 1 tablespoon of marinara sauce, 2 tablespoons of cooked ground sausage, 2 tablespoons of shredded mozzarella cheese, and 2 basil leaves. Fold both ends of tortilla over the filling, forming a triangle. Add the pizza pocket, folded tortilla side-down, to the oiled skillet. Continue building the triangles, placing them into the pan like pizza slices forming a circle.
Cook over medium heat on the stove for about 3-4 minutes, carefully lifting the tortilla to check that the underside is golden brown and crispy. Top the tortillas with the remaining ½ cup shredded mozzarella. Transfer the pan to the oven and bake for 5 minutes. If the cheese isn’t brown and edges of the tortillas golden brown and crispy, broil on high heat for 1-2 minutes. Top with oregano leaves or fresh basil and enjoy.
Notes
Vegetarian - Simply leave out the chicken sausage or ground beef and make this recipe all cheese, or you can add in small, chopped veggies.
While you can add in your own vegetables, just be mindful of ones with more moisture (spinach, zucchini, mushrooms) as they can make the tortilla soggy. Also be careful to not overfill.
