Preheat oven to 400℉/200℃. Add olive oil to a 9x13 inch baking dish. Nestle the Boursin cheese in the center of the dish and add in orzo, broth, broccoli, chicken, and spinach and sprinkle everything with kosher salt and black pepper.
Cover with foil and bake for 25-30 minutes. Uncover, stir, and bake for 5-7 more minutes, or until orzo has cooked through.
Stir one more time to fully combine everything and add additional salt and pepper if needed. Top with fresh parsley to finish.
Notes
Garlic powderoption - I wanted to keep this recipe as simple as possible, but adding in 3/4 teaspoon of garlic powder to the orzo before baking really amplified the flavor!
Troubleshooting - If the orzo isn't saucy/too thick add 1/4 cup of broth or heavy cream to the mix and stir. This can happen if the orzo is baked too long or your oven runs hot, but will still be delicious!
Boursin flavors - This would also work with other Boursin cheese flavors like Shallot & Chive or Black Pepper.
