Preheat oven to 350 degrees Fahrenheit (180 ℃). Lightly spray or grease a muffin tin with oil and set aside. In a large mixing bowl, combine the dry ingredients: oats, flour, sugar, chia seeds, flax seeds, baking powder, cinnamon and salt. Stir gently with a fork or whisk until just combined.
In a separate medium sized bowl, combine the wet ingredients: butter, vanilla and maple syrup. Lightly whisk the wet ingredients until fully combined. Add the wet ingredients to the dry ingredients and continue mixing until fully combined and the oats are well coated and appear pebbly in texture.
Form 1” balls with the dough and press the dough firmly into the muffin tins shaping deep cups for the apple filling to nestle into. Bake the oat bite cups for 15 minutes at 350℉ on the middle rack, until lightly golden on the edges.
Meanwhile, add the apple juice and arrowroot starch a small saucepan and whisk together to combine. Whisk in the applesauce and cinnamon. Stir and bring to a simmer. Cook for around 5 minutes until the sauce has thickened a bit, stirring every minute or so. Remove from heat.
Once the cups are done baking, add the apple pie filling to the center of each cup, about 1 tablespoon each. Bake the apple pie oat bites for 10 minutes at 350℉ or until the centers have congealed and the edges are golden brown. Let the bites cool for 10 minutes before handling.
Before removing the bites from the muffin tin, run a sharp knife along the edges to release them from the muffin tins. Serve warm or at room temperature.

Storage - Store these in an airtight container with parchment in between layers. You can also freeze these and defrost at room temperature.
