This Vegetarian Tortilla Soup is made with sweet potatoes, black beans and shallots for a filling and flavorful meal! Quick and very healthy, spices like cumin and chili powder combine for a great vegan tortilla soup.
Sweet Potatoes | Corn | Vinegar Diced Tomatoes | Black Beans Cilantro | Olive Oil | Chili Powder Cumin | Garlic | Vegetable Broth Jalapeño | Shallots | Tortillas
START COOKING Saute shallots, sweet potatoes, corn, jalapeño and salt. Stir frequently until the shallots and potatoes become softened.
SIMMER Add garlic, chili powder and cumin - stir till fragrant and mixed. Add black beans and diced tomatoes. Then stir in the broth and simmer for about 30 minutes.
MAKE TORTILLA STRIPS Cut into small strips and brush the tortilla with oil. Bake until lightly browned on both sides. Click link below for details on frying the tortilla strips.
