These roasted broccoli sweet potato bowls are filled with delicious vegetables and topped with a creamy tahini dressing.

Tahini Dressing Tahini | Sesame Oil | Honey White Vinegar | Garlic Ginger | Kosher Salt
Toss sweet potatoes with olive oil, salt and pepper, spread out evenly on a baking sheet and bake for 20 minutes, then toss so they'll brown evenly.
Add Broccoli Toss broccoli with olive oil, salt and pepper and add to the sheet pan. Bake until both broccoli and sweet potatoes are golden brown and crispy in parts.
Make Sauce Combine all tahini sauce ingredients together, prepare any other veggies you plan to add like pepper, and green onion, and cook the rice.
Build The Bowl Begin to build the bowl with rice, sweet potatoes, and broccoli on the bottom. Then top with tahini sauce, green onion, and toasted sesame seeds.
