Ricotta stuffed chicken is the perfect weeknight meal with seared chicken breasts and creamy ricotta cheese. Stuffed with shredded zucchini and garlic, it's a flavorful and easy meal that is ready in 30 minutes!

Shred zucchini and squeeze out excess moisture. Mix with minced garlic and ricotta cheese, along with a pinch of kosher salt and pepper. Stir until well combined.
Place the chicken breasts on a cutting board and top with a sheet of parchment paper. Use a kitchen mallet to pound out the chicken to desired thinness. Slice down the middle without cutting all the way through.
Mix the garlic, sumac, salt and pepper and season both sides of the chicken. Spoon the ricotta filling inside and place a slice of mozzarella on top of the filling. Secure with toothpicks.
Sear chicken until just golden brown. You may need to work in batches to give the chicken enough space to brown. The toothpicks can be removed after searing on both sides.

Bake for about 10-12 minutes. Serve warm with a salad and rice, potatoes, or warm bread.
