Toss vegetables with butter and olive oil in the dutch oven and roast for roughly 25 minutes, then set aside.
Sear The Pork Season pork with salt and pepper and sear, fat side down, for about 3-4 minutes. Flip the pork over and return the veggies to the dutch oven.
Roast The Pork Combine garlic, mustard, and thyme and spread on top of the pork roast, then roast for 40-50 minutes, uncovered.
Make Apples And Cabbage Season cabbage and sauté, for about 15 minutes. Remove the cabbage and brown the apples for 2-3 minutes until caramelized.
