Combine the ingredients in a high speed blender or food processor, adding chia seeds last.
Blend and Chill Blend until mostly smooth, then refrigerate for at least an hour for the vanilla chia pudding to thicken.
Add Toppings Add the toppings if serving right away, or store in a large air tight container to scoop out as needed.
