Decadent and creamy with a shortbread crust and sweet strawberry topping, these strawberry cheesecake bars are an easy way to enjoy cheesecake without the hassle of a water bath.
Cream Cheese | Shortbread Strawberries | Sugar | Eggs Ricotta | Heavy Cream | Flour Vanilla | Butter | Cornstarch
For the Crust Mix the crushed cookies and butter until evenly incorporated. Press tightly into the bottom of a greased pan.
For the Filling Mix cream cheese and sugar, stir in eggs, ricotta and vanilla, then sift in flour and salt. Add in cream, mix well and pour over the prepared crust. Bake until just golden and set.
For the Topping Cook strawberries, sugar and cornstarch until thickened. Pour over cheesecake while still warm. Let it cool slightly, before placing into the fridge.
ENJOY!
Once cooled, cut into squares and serve.
So good! They are a great little treat to use up my late summer strawberries.
