Season chicken with salt & pepper. Lightly oil the slow cooker and add the chicken, broth, garlic, oregano, shallots, artichoke hearts, and sun-dried tomatoes.
SLOW COOK Cook until chicken reaches an internal temperature of 165F. About 30 minutes before serving, add the cream cheese & spinach.
FINISH Allow spinach to warm through and wilt, then stir before serving. Add more salt & pepper to taste. If you'd like, you can shred the chicken using two forks, or serve as a whole chicken breast.
