This roasted cauliflower in cheese sauce is the perfect low carb "cauliflower mac and cheese" side dish. This is one delicious way to get your kids (or let's be honest, adults) to eat their cauliflower.
Fresh Cauliflower | Olive Oil Garlic | Shallot | Broth Half and Half | Goat Cheese Parsley | Salt | Pepper
Toss the cauliflower florets with olive oil, kosher salt, pepper, and garlic cloves. Then spread them on a baking sheet and roast until golden brown.
Cheese Sauce Heat olive oil and sauté garlic and shallot for about 2 minutes. Add broth, then the half and half and bring to a very low simmer for about 5 minutes.
Add Cauliflower Turn the heat to low and stir in the goat cheese until smooth. Then add roasted cauliflower and stir to coat with the cheese sauce.
