Radishes with Herbed Butter

Ingredients

  • 2 bunches red radishes, washed and trimmed You can leave this whole or cut them if you'd like
  • ¼ lb GOOD unsalted butter at room temperature I used Kerrygold
  • 1 tablespoon chopped scallions or chives
  • 1 tablespoon parsley
  • 1-½ teaspoon dill I didn't have this on hand and left it out
  • ½ teaspoon white distilled vinegar
  • ½ teaspoon kosher salt
  • freshly cracked black pepper

Instructions

  • Combine all the ingredients in a mixing bowl (or use an electric mixer with the paddle attachment). Beat on low speed till combined, but do not whip.
    I topped mine with some extra pink himalayan sea salt for extra flair.
