  • 2 bunches red radishes, washed and trimmed You can leave this whole or cut them if you'd like
  • 1/4 lb GOOD unsalted butter at room temperature I used Kerrygold
  • 1 tbsp chopped scallions or chives
  • 1 tbsp parsley
  • 1-1/2 tsp dill I didn't have this on hand and left it out
  • 1/2 tsp white distilled vinegar
  • 1/2 tsp kosher salt
  • freshly cracked black pepper
  1. Combine all the ingredients in a mixing bowl (or use an electric mixer with the paddle attachment). Beat on low speed till combined, but do not whip.

    I topped mine with some extra pink himalayan sea salt for extra flair.
