Pumpkin Puree | Sage Chives | Cream Cheese Butter | Shallots | Pasta Pepitas | Broth
Add pasta to boiling water and cook according to package directions. Drain, but reserve some of the cooking water.
MAKE THE SAUCE Cook shallots & garlic, stirring for 1-2 minutes. Add pumpkin puree and pasta water, whisk until smooth. Whisk in cheese and sage until creamy and thick.
Add in the hot pasta and toss to coat. The sauce should be enough to coat the pasta well, but you can add more pasta water as needed.
Top with chives, fresh sage, and pepita crumbles.
