Sorry, Milton, but laughter just isn’t cutting it right now! This month I’ve been borderline “on the edge”. There’s been a lot of travel for weddings, a lot of time with family, a lot of exercise for Steps2Balance, and a lot of work on this site. I’m pretty exhausted and I realize it’s time to step away for a few days. I’ll be taking some time off for a little vacation this week. I can’t wait to come back refreshed with some new recipe ideas, meal plans, and more! Clearly I plan to do a lot of eating…

I wanted to leave you with a few links and some ideas for meal planning.

My Favorite Breakfasts

Overnight Oats with blueberries, vanilla, sunbutter, and hemp milk. You can add in some chia or hemp seeds too, if you’d like. I also love it with diced apples, cinnamon, vanilla, and nutmeg.
Cherry Smoothie
Strawberry Cream Cheese Bread (in muffin form!): Follow Jennifer’s directions, but put batter into a buttered muffin pan. Bake at 350 for 40-45 minutes.
Goat Cheese and Spinach Omelet (keto)
Buckwheat Granola (GF) or Sunbutter Balls (GF)

Tuna Salad
Quick Vegetarian Wrap
Leftover Pasta Salad with (naked) rotisserie chicken added
Simple Salad with Italian Dressing – add mixed greens, cucumber, green onion naked rotisserie chicken, and carrots
Easy Chicken Salad – naked chicken + 1-2tbsp safe mayo + chives + pomegranate seeds + S&P

My Favorite Dinners

#HYH Moroccan Chicken with Pomegranate Cous Cous

Instant Pot Pulled Pork – make this and use the meat for salads the next day, OR stuff into a baked sweet potato with some greens and top with the spicy mayo.
Honey Garlic Chicken OR Moroccan Chicken
Tahini Sweet Potato Bowls – you can make this vegetarian or top with leftover meat (be careful of tyramine if more than 2 days old). This makes a great lunch the next day too.
Mediterranean Baked Halibut
Ina’s Sliders – skip the gruyere and use shallots instead of onions
