Keto/HYH Radishes with Herbed Butter

I’ve recently been thinking a lot about how I can incorporate different migraine diets into recipes that are also Heal Your Headache compliant. I know that the Heal Your Headache Diet is the easiest way for most people to start a migraine diet, but a few branch out to diets like Keto or further eliminate gluten, dairy, and nightshades. I know quite a few people on Keto, and worked on a few Heal Your Headache recipes that can easily crossover this past weekend. I see you Keto/HYH friends!

This is one of my favorites from when I first met my (now) husband. I can’t quite remember if he introduced me to this recipe or if it was his super-chef roommate, Justin, who I’ve been trying to get a guest post from for a while now. Both had moms that were huge Ina Garten fans, and had made a version of this recipe several times before. In all honestly, I had only tried radishes in a salad and had never had them on their own. I figured anything dipped in butter would be good, and boy was I right. It’s super easy and elevated, making it the perfect quick appetizer.

The key to this recipe is to buy really fresh radishes, and really good butter. This is one of those moments where you pay up for the Kerrygold butter that’s $3 a stick (I can hear my dad complaining about how expensive this butter is in my head right now). The recipe makes about 1/2 cup of herbed butter, which you probably won’t eat all of. It’s worth having extra to save to put in future cooking, like on top of steaks, chicken, or whatever your heart desires.

Ina serves this on a loaf of crusty bread which you can certainly do, but I find they’re just wonderful on their own.

Ingredients
  • 2 bunches red radishes, washed and trimmed You can leave this whole or cut them if you'd like
  • 1/4 lb GOOD unsalted butter at room temperature I used Kerrygold
  • 1 tbsp chopped scallions or chives
  • 1 tbsp parsley
  • 1-1/2 tsp dill I didn't have this on hand and left it out
  • 1/2 tsp white distilled vinegar
  • 1/2 tsp kosher salt
  • freshly cracked black pepper
Instructions
  1. Combine all the ingredients in a mixing bowl (or use an electric mixer with the paddle attachment). Beat on low speed till combined, but do not whip.

    I topped mine with some extra pink himalayan sea salt for extra flair.
